Have tips for visiting Mexico's Riviera Maya?

My fiancee and I are heading down to Mexico's Riviera Maya for our honeymoon this fall. We've never been there, and I haven't spent any time in Mexico at all. We're stoked about exploring ancient Mayan ruins, snorkeling in some of the world's best coral reefs and sampling the food and culture for a week. We plan to skip Cancun itselfsince we're not really into the whole big city thing when we're trying to just kick back and relax.
So, I'mlooking for travel tips from others who have spent time on the Yucatan Peninsula.
What should we absolutely not miss seeing? Is there a particular tour guide company that's especially good? Best Mayan ruins? What should we bring, what should we avoid? Do you have tips on how we can fit in with the culture and how much Spanish we shouldknow? (I made it to Spanish III in high school but that's the last time I used it because I keep visiting German-speaking countries.) Travel and packing tips? We plan to do some Christmas shopping there for family-- are there special gifts we should keep our eyes peeled for?
I would love to get your insights if you've been to the Riviera Maya before. Gracias!
