I couldn't find any cornstarch, so I "improvised" and accidently made this great cherry pie. Here is the recipe:
3 cans Oregon Red Tart Cherries
1/2 cp Splenda
1 cinnamon stick
1 6 oz box of Raspberry Jello
2 TB flour
1 TB Sugar
1 box of Frozen Pastry dough (for 2 crusts)
Baker's Secret Spray
Vanilla Ice Cream
Preheat oven to 500 degrees Fahrenheit. Place a sheet pan on bottom rack. Let Frozen Pastry dough thaw on counter at least 15 min.
Drain cherries into 1 quart sauce pan, add Splenda, cinnamon stick, Jello mix, and flour.
Stir mixture over medium heat until it boils and thickens. Remove from heat.
Gently fold cherries into mixture. Pluck out cinnamon stick. Set aside.
Spray deep dish glass 9" pie pan with Baker's Secret. Carefully unfold 1 sheet of Frozen Pastry dough and press into pie pan.
Using Slotted Spoon, spoon cherry mixture into pie pan. Brush extra cherry juice on pie dough that lays on ridge of pan. Carefully unfold second sheet of Frozen Pastry dough on top of pie. Seal the two sheets of pie dough together with your fingers. Using your thumbs, fold the top sheet under the bottom sheets and squeeze the two sheets together, then Pinch the pie dough to form a curved ridge around the perimeter of the pie.
Brush cherry juice all over the top of the pie and the ridge. Sprinkle 1 TB of sugar on top the pie. Use knife or fork to poke holes in top of pie to let juices and steam come out. You can be very creative and put designs in the dough.
Turn the oven heat down to 425 degrees. Place the pie on the middle rack. After 25 minutes, rotate the pie and turn the oven down to 325 degrees. Cook for another 30 minutes.
Remove the pie from the oven. Cool for 2 hours.
Serve with 1 scoop of Vanilla Ice Cream.
Tart! Vanilla ice cream calms the tartness. Splenda helps reduce calories. Jello adds gelatin which is good for our cartilage and bones. The Cherries have great fiber. Baker's Secret Spray ensures the pie dough won't stick to the pan. And, the frozen pastry dough makes the pie making easy. Make sure the dough is fully thawed, yet still cold, as it likes to crack. If it does crack, just pinch the pieces together.
